Ras Malai Peda


Ingredients:


200 gm paneer
1/2 cup milk powder 
3 tbsp powdered sugar
1 tsp ghee
7-8 pistachio chopped
3-4 drops of rose essence
7-8 rose petals

Method:


1. Cut paneer into pieces and grind them in a mixer jar,

2. Heat ghee in a pan transfer mashed paneer in it.

3.  Add milk powder, powdered sugar in paneer and mix it well.

4. Stir the paneer, sugar and milk powder mix on low flame till it leave the pan.

5. Now transfer the paneer mixture in a plate, let it cool completely.

6.  Add some chopped pistachio, rose petals and rose essence & mix it well.

7.  Now divide the paneer mixture into small balls, shape them like pedas or desired 
     shape

8. Garnish pedas with rose petals, pistachio.

Ingredients:


1 cup urad dal
3-4 green chilies, chopped
1 tsp pepper powder
1/2 tsp ginger paste
1 tsp coriander leaves
Coconut chutney for serving
Sambhar for serving
Oil for deep-frying
Salt to taste 


Method:


1. Clean, wash and soak urad dal in water for around 4-5 hours.

2. Drain, & blend in a mixer to a smooth batter, add water if required.

3. Add green chilies, salt, pepper powder, ginger paste and mix it well.

4. Wet your hand, take some mixture & make a hole in the center of  mixture.

5. Heat oil in a kadhai, upturn your hand, drop the vada in oil.

6. Deep fry vada till golden brown in color from both sides.

7. Repeat same process with remaining batter to make medu vadas.

8. Drain on absorbent paper.

9. Vadas are ready, serve hot  with  sambhar and coconut chutney.

Ingredients:



10 marie biscuits
1/4 cup cashew nut powder
1/4 cup almond powder
22 tbsp desiccated coconut
1/2 cup khoya
2 tbsp cocoa powder 
2-3 tbsp milk( if required)
2 tbsp powdered  sugar

Method:


1. Make a fine powder of marie biscuits.

2. Add all ingredients in a big bowl and mix well.

3. Make a smooth dough, add milk if required.

4. Divide the dough into small equal portion.

5. Take a star shape mold, grease it properly.

6. Take one portion of dough, cut it with the help of mold.

7. Repeat same process with remaining dough.

8. Choco Star is ready to serve.

Tips:


1. You can use another shape of mold... square shape, diamond shape.

2. Few drops of vanilla essence can also be added to chocolate dough.

Churma Modak

Churma Modak

Churma Modak is a very popular delicacy offered to Lord Ganesha during Ganesh Chaturthi festival. Churma Modak is a sweet prepared combining wheat flour, sugar, cardamom, ghee and dry fruits.

Ingredients:



1 cups whole wheat flour
1 cups powdered sugar
2 tbsp ghee
3/4 tsp cardamom powder
2 tbsp cashew nut, almond chopped
1/2 cup ghee
Water as required

Method:


1. In a bowl add wheat flour, 2 tbsp ghee and mix it well.

2. Make a soft dough using water.

3. Knead the dough well, divide it in to apple size portion.

4. Make a ball out of each portion.

5. Now bake balls in a preheated oven on 240°C for 20 mins.
    If you want you can deep fry these batis/balls in ghee.

6. Take out balls from oven, let it cool and grind them into coarse powder.

7. In a bowl add powdered sugar, cardamom powder, ghee, cashew nut,
    almond to churma 
and mix well.

8. Give churma the shape of modak using modak mould.


9. Churma Modaks are ready to offer to Lord Ganesha.

Summer's here & Ice cream is a perfect treat for this season. ice cream is favored by every one..... kids, adult, those with a sweet tooth, those who crave something cold and refreshing .....ice cream is a prefect dessert loved by all.

Ice cream comes in a vast variety of flavors.... vanilla, chocolate, mango, strawberry....list is quite long. Here i m posting the recipe of home made Eggless Chocolate Ice Cream...hope you like it !!

Eggless Chocolate Ice Cream


Ingredients:


1 liter full cream milk
2 tbsp cornflour
1/2 cup fresh cream
2 tbsp cocoa powder
1/2 cup sugar
1/4 tsp vanilla essence
Choco chips for garnishing

Method:


1. In a bowl add water, cornflour, mix well & keep aside.

2. Combine milk, sugar in a heavy bottom pan, boil it for 15-20 mins or
    till thickness on 
medium flame, stir in between.

3. Add cornflour paste in milk, mix well, boil it for another 2-3 mins.

4. Switch off the flame, allow milk to cool.

5. Now add cocoa powder, vanilla essence in the milk, mix well.

6. Take the fresh cream in a bowl, whip it.

7. Add the cream into cocoa milk mixture, mix properly.

8. Take a shallow ice cream container, transfer ice cream mix in container,
    cover it 
& freeze for 6-7 hours or till semi soft.

9. Take the semi soft ice cream in a blander, blend it till smooth & thick

10. Transfer the ice cream into the container freeze it for 8-10 hours or till set.

11. Scope the chocolate ice cream, garnish with choco chips

12. Serve immediately.

Ingredients:


200 gm cashew nut
100 gm sugar
3 tbsp milk powder
2 tsp ghee
2-3 sheets of silver vark optional
Water as required

Method:

1. Grind cashew nut to make a smooth powder and keep it aside.

2. Now for sugar syrup take a non stick pan add sugar and water in it.

3. On low flame stir the sugar syrup till it forms one string consistency.

4. Now add cashew nut powder and ghee mix it well.

5. Switch off the heat now make the dough of cashew nut, ghee and sugar syrup.

6. Make a big ball out of the dough, grease plain plastic sheet or butter paper
     with ghee.

7. Keep that ball in the center of butter paper cover it with another butter paper.

8. Roll the dough with a rolling-pin, adjusting the thickness according to 
     your choice.

9. Now cut the dough into diamond shape or the shape as per your choice.

10  Decorate it with silver vark.

11. Kaju katli is ready to serve for Diwali.

12. You can store it in air tight jar in refer.... for 10-15 days.

Ganesh Festival is incomplete without Modak. Modak is Lord Ganesh's favourit food. Til Modak is a tasty and delicious variation of traditional modak. 

Til modak is  simple and easy to prepare, everyone loves it specially kids. So
lets welcome 
Lord Ganesh with mouth watering and tempting Til Modak.

Ingredients:


200 grams sesame seeds
200 grams jaggery (gur)

Method:


1. Roast the sesame seeds in a pan on medium heat stir at intervals. 

2. Sesame seeds pop & changes the color this takes about 2-4 mins.

3. Set them aside to cool.

4. Grind sesame seeds in a coarse powder.

5.Grind jaggery also to a coarse powder.

6. In a big bowl add sesame seeds, jaggery and mix well.

7. Take a modak mould, grease it, stuff modak mixture to the mould press it & open.

8. Remove til modak and place it on a plate.

9. Til Modaks are ready for Ganesh Chaturthi.

Rainy season is here and it is not possible that we can't think of garma garam onion pakoras and chai. This rainy weather just adds to the romance of pakora and chai and there is no one who can resist these crispy, spicy, delicious onion pakoras. Onion Pakoras are very commonly made in Indian households and a popular snack and street food, served with green chutney/tomato sauce and a cup of hot tea.

The ingredients we need to prepare pakoras are easily available in every house like besan (chickpea flour), onion, oil and spices. Onion pakoras are very easy and quick to prepare and have to be eaten hot and crisp.

Ingredients:


2 medium onion chopped
1 cup besan (chickpea flour)
1/2 tsp red chili powder
1 tsp rice flour
1/4 tsp turmeric powder
2 green chili chopped
1 tbsp coriander leaves chopped
1 tsp salt
Oil to deep fry

Method:


1. Peel onions & slice them thinly.

2. Add besan (chickpea flour), rice flour & all dry spices in a big bowl
    and mix well.

3. Add green chili and coriander leaves and combine till dough is formed

4. If onions do not release water, then sprinkle few drops of water.

5. Heat oil to in a pan, take small portion of dough and drop in the oil, keep
    stirring occasionally for even frying of pakoras.

6. Fry pakoras on medium flame till it turns golden and crispy.

7. Drain on an absorbent paper.

8. Garnish with coriander leaves, serve crispy, hot onion pakoras with tomato
    ketch up/green chutney and a cup of hot chai (tea).

Tips:


1. Onion have to be thinly sliced because the slices will get fried faster.

2. You can use a pinch of baking soda to add extra fluffiness to pakoras.

3. Pakoras will be more crisp if you add 1 tsp oil in dough.

4. you can use semolina in place of rice flour.
