Ingredients:


200 gm cashew nut
100 gm sugar
3 tbsp milk powder
2 tsp ghee
2-3 sheets of silver vark optional
Water as required

Method:

1. Grind cashew nut to make a smooth powder and keep it aside.

2. Now for sugar syrup take a non stick pan add sugar and water in it.

3. On low flame stir the sugar syrup till it forms one string consistency.

4. Now add cashew nut powder and ghee mix it well.

5. Switch off the heat now make the dough of cashew nut, ghee and sugar syrup.

6. Make a big ball out of the dough, grease plain plastic sheet or butter paper
     with ghee.

7. Keep that ball in the center of butter paper cover it with another butter paper.

8. Roll the dough with a rolling-pin, adjusting the thickness according to 
     your choice.

9. Now cut the dough into diamond shape or the shape as per your choice.

10  Decorate it with silver vark.

11. Kaju katli is ready to serve for Diwali.

12. You can store it in air tight jar in refer.... for 10-15 days.

Ganesh Festival is incomplete without Modak. Modak is Lord Ganesh's favourit food. Til Modak is a tasty and delicious variation of traditional modak. 

Til modak is  simple and easy to prepare, everyone loves it specially kids. So
lets welcome 
Lord Ganesh with mouth watering and tempting Til Modak.

Ingredients:


200 grams sesame seeds
200 grams jaggery (gur)

Method:


1. Roast the sesame seeds in a pan on medium heat stir at intervals. 

2. Sesame seeds pop & changes the color this takes about 2-4 mins.

3. Set them aside to cool.

4. Grind sesame seeds in a coarse powder.

5.Grind jaggery also to a coarse powder.

6. In a big bowl add sesame seeds, jaggery and mix well.

7. Take a modak mould, grease it, stuff modak mixture to the mould press it & open.

8. Remove til modak and place it on a plate.

9. Til Modaks are ready for Ganesh Chaturthi.

Rainy season is here and it is not possible that we can't think of garma garam onion pakoras and chai. This rainy weather just adds to the romance of pakora and chai and there is no one who can resist these crispy, spicy, delicious onion pakoras. Onion Pakoras are very commonly made in Indian households and a popular snack and street food, served with green chutney/tomato sauce and a cup of hot tea.

The ingredients we need to prepare pakoras are easily available in every house like besan (chickpea flour), onion, oil and spices. Onion pakoras are very easy and quick to prepare and have to be eaten hot and crisp.

Ingredients:


2 medium onion chopped
1 cup besan (chickpea flour)
1/2 tsp red chili powder
1 tsp rice flour
1/4 tsp turmeric powder
2 green chili chopped
1 tbsp coriander leaves chopped
1 tsp salt
Oil to deep fry

Method:


1. Peel onions & slice them thinly.

2. Add besan (chickpea flour), rice flour & all dry spices in a big bowl
    and mix well.

3. Add green chili and coriander leaves and combine till dough is formed

4. If onions do not release water, then sprinkle few drops of water.

5. Heat oil to in a pan, take small portion of dough and drop in the oil, keep
    stirring occasionally for even frying of pakoras.

6. Fry pakoras on medium flame till it turns golden and crispy.

7. Drain on an absorbent paper.

8. Garnish with coriander leaves, serve crispy, hot onion pakoras with tomato
    ketch up/green chutney and a cup of hot chai (tea).

Tips:


1. Onion have to be thinly sliced because the slices will get fried faster.

2. You can use a pinch of baking soda to add extra fluffiness to pakoras.

3. Pakoras will be more crisp if you add 1 tsp oil in dough.

4. you can use semolina in place of rice flour.

Cold Coffee with ice cream is an amazing drink, which is a perfect balance of coffee and sweet. Cold coffee is treat for coffee lovers with easy ingredients available at home. Cold coffee with ice cream is a favorite recipe among children and adults.

Preparing the Cold coffee is quite simple and fast.....to make this Cold Coffee you need milk, sugar, vanilla ice cream, chocolate syrup..... which are easily available at home.....mix all the ingredients in a blender, blend them, pour in a long glass, top it with ice cream and choco chips....your cold coffee with ice cream is ready.

Ingredients:


1 cup milk
1 tsp coffee powder
4 tablespoon vanilla ice cream
1/2 cup Ice cubes
2 tbsp choco chips
1 tsp sugar
2 tbsp chocolate syrup

Method:


1. In the jar of the blender add coffee powder, milk, sugar, 2 tbsp ice cream
    and ice cubs.

2. Blend it till frothy and foamy.

3. Take chocolate syrup and decorate the sides of glass.

4. Keep the decorated glass in frezer.

5. After 5-10 mins remove glass from frezer, transfer cold coffee in glass.

6. Top it with vanilla ice cream, choco chips & serve chill.

1. You can add cream in cold coffee.

2. Chocolate syrup or cocoa powder can be add to enhance the
    taste of coffee

3. You can use any ice cream of your choice in place of vanilla.

4. You can garnish the coffee with chocolate syrup also.

The festival of Gudi Padawa holds a special significance for the people of 
Maharashtra as it is considered a very auspicious occasion. Many mouth 
watering and delicious dishes prepared on Gudi Padawa. Puran Poli is most
popular among them.


Puran Poli is roti or poli with delicious, mouth watering stuffing. the stuffing made
with chana dal, Sugar, ghee, cardamom powder and the outer part is prepared
from 
whole wheat flour or maida.

The methods of preparing puran poli varies from people to people. I am sharing
the recipe of Shahi Puran Poli which has saffron, cardamom flavoured chana 
dal stuffing with richness of cashew nuts, almonds, pistachio, raisins, nutmeg etc.
Try this delicious Shiahi Puran Poli recipe on the auspicious day of Gudi Padwa.

Ingredients:


For dough:



2 cups whole wheat flour
2 tbsp pure ghee
Water as required

For filling:


1 cup chana dal
1 cup sugar
2 tbsp ghee
1/2 tsp cardamom powder
2-3 tbsp cashew nut finely chopped
5-6 almond finely chopped
5-6 pistachio finely chopped
1/4 tsp nutmeg powder
2 tbsp desiccated coconut
8-10 strands of saffron soaked in milk
5-6 raisins
1 tbsp ghee 
Water as required
Ghee for frying
Sesame seeds for garnishing 


Method:



1.Take wheat flour in a big bowl, add ghee and mix well.

2. Make a soft dough by adding enough water and keep it aside
    for 1/2 an hour.

3. Clean, wash and pressure cook chana dal with enough water
    till done.

4. Drain excess water from channa dal and grind in a coarse paste.

5. Heat 2 tbsp ghee in a pan, add dal paste, sugar, all dry fruits and cook
    on medium  heat till thickens, while stirring continuously.

6. Add cardamom powder,nutmeg powder, mix well, remove from heat filling is ready.

7. Make small balls of filling.

8. Knead the dough, make small balls out of it.

9. Take 1 ball of dough, flatten it a bit,  keep a filling ball in center of
    dough.

10. Seal the edges of the dough over the filling and flatten it.

11. Dust it wheat flour and roll to a thick poli.

12. Heat a tawa, place the poli on it, drizzle ghee and cook the poli
      on both sides, until brown spots appear. 

13. Puran Poli is ready, garnish with sesame seeds.

14. Serve hot with a pure ghee and sharikhand.

Tips:


1.You can also use toover dal to prepare filling.

2. Jaggery can be used in place of sugar.

3. Fine flour can be used in place of whole wheat floor to prepare the poli.

4. You can roll puran poli thick or thin as per your choice.

Holi the "Festival of Colors" is about colors, fun, play and laugh, get-togethers.
Holi is incomplete without some delicious home made sweets. Gujiya is a must-
have sweet 
during Holi and the festival would seem almost incomplete without it.

Gujiya is a very popular khoya recipe made during Holi festival. This sweet made
with 
khoya, sugar, dry fruits, maida (fine flour) etc.This is traditional version. i have
prepared a different version of gujiya  "Chocolate Gujiya" by adding coco powder in
the filling.
 

I am sure you will love this Chocolate Gujiya.This is a treat for all the chocolate lovers.

Ingredients:


For stuffing:


1 cup mawa/khoya
1/2 cup desiccated coconut
5-6 almond chopped
5-6 cashew nut chopped
5-6 pistachio chopped
5-6 wall nut chopped
3 tbsp coco powder
1/2 cup powdered sugar
Ghee to fry 

For covering:


1 cup fine flour
2 tbsp oil
Water as required

Method:


1. Take fine flour in a bowl, add oil and mix it well.

2. Make a soft dough by using enough water.

3. Cover the dough with a moist cloth & keep aside for 30 minutes.

4. Crumble and grate the khoya/mawa.

5. Add chopped nuts, coco powder, sugar and mix well.

6. Knead the dough and divide in to small equal portion.

7. Make a smooth ball of each portion.

8. Roll each ball into a small puri.

9. Now place 1 tbsp of mawa stuffing on one side of the circle, keeping
    edges empty.

10. Apply water all over the edges.

11. Bring edges together and join. gently press the edges.Trim the extra edges
      with a gujiya cutter. Its very important that
 gujiya is pressed & sealed well.

12. Repeat the same process with all dough and stuffing.

13. Heat ghee in a pan, deep fry gujiyas on medium heat till light golden from
      both sides.

14. Drain on an absorbent paper. Let them cool completely.

15. Gujiyas are ready for Holi.
