Aamras Puri

Aamras Puri


Aamras Puri is a delicious and very popular dish of summer season in India specially in Maharashtra and Gujarat. Summer season is incomplete without aamras puri. Aamras puri is a complete meal on its own.


Aamras is made with fresh mangoes, pulp of a ripe fruit is extracted usually by hand. Sugar, ghee, milk and cardamom powder, also added to the pulp to enhance its taste and served with fried crisp hot puri.

Ingredients:

For aam ras:


2-3 mangoes
1 cup milk
water as required
Sugar to taste

For puri:


2 cup wheat flour
1/2 tsp salt 
Water as required
Oil as required

Method:


For aam ras:


1.Wash, peel & cut mangoes.

2. Add mango, milk, water in a blander, blend till get a smooth puree.

3. Transfer aamras in a bowl, add sugar if required and mix well.

4. Chill aamras in the refrigerator.

For puri:


1. Sieve flour & salt. Add 1 tsp oil, mix well.

2. Knead it to a firm dough by adding enough water and keep aside for 10-15 mins.

3.  Again knead the dough, make small balls out of it.

4. Roll each ball into small circles with thin-medium thickness.

5. Now drop puri into oil, when it coming to surface turn it and  fry golden brown
    for other side. 
Drain puri on absorbent paper.

6. Repeat same process with remaining puri.

7. Serve crisp hot puri with chilled aamras.

Tips:


1. You can add sugar to adjust the sweetness of aamras

2. For variation cardamom powder, saffron or nuts can be added to aamras.

3. Pure ghee can also be added to aamras to enhance its flavour.

Aamrakhand

Aamrakhand


Aamrakhand is a very popular Indian dessert made with strained yogurt, mango pulp, flavoured with nuts and saffron. It is a traditional Maharashtrain delicacy usually served with puris. This dessert is very easy to prepare and tastes amazing.

Ingredients:


3 cup yogurt
2 ripe mangoes
1/2 tsp green cardamom powder
4-5 almond, pistachio chopped
1 mango cut into cubes
1 tbsp milk
4-5 strands of saffron
Sugar as required


Method:


1. Hang yogurt in a muslin cloth for 6-7 hours in a cool place.

2. Puree the mangoes & keep aside.

3. Soak the saffron strands in milk.

4. Take hung yogurt, add sugar and mix well till sugar dissolves.

5. Now add cardamom powder, saffron milk, mango puree, almond, pistachio
    and mix well.

6. Chill, garnish with mango pieces and serve.

Tips:


1. Canned Mango pulp can also be used in place of fresh mango.

2. Use only sweet mango.
