Dal Dhokli

Dal Dhokli is a traditional and very healthy Gujarati recipe. It is a perfect combination of  whole wheat flour, gram flour dhoklis simmered in dal, mild sweet and spicy taste of aromatic spices and crunchy peanuts.

Dal Dhokli is a healthy and nutritious meal. The dish is rich in proteins, iron, calcium and dietary fiber. Just one plate of dal dhokali makes a complete food.

Gujarati delicacy dal dhokli is capable of carrying entire meal on its own,could also serve it with rice to make it all the more tasty and wholesome. It is a healthy and nutritious dish which  is savored by all age groups.



Dal Dhokli


Ingredients:


1 cup toovar dal

2 tbsp wheat flour
2 tbsp gram flour
1/4 tsp turmeric powder
1 tsp red chili powder
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp jaggery grated/sugar
2 tbsp peanuts
2 tbsp grated coconut
2 tbsp coriander leaves chopped
2 pinches of asafoetida
1 cloves garlic finely chopped
8-10 curry leaves
3 kokum
1 tsp oil
1 tbsp ghee
Water as required
Salt to taste

Method:



1. Wash & soak toovar dal in 2 cups of water for half an hour.

2. Mix whole wheat flour & gram flour. 

3. Add salt, turmeric powder, red chili powder, asafoetida, oil & 
    sufficient water to knead into a hard dough. 

4. Boil dal with 2 cups of water & peanuts till done. 

5. Roll out thin rotis of dough & cut into desired shape.

6. Heat ghee in a pan, add mustard seeds, when it crackles add curry 
    leaves, cumin seeds, asafoetida, garlic. Now add this to dal. 

7. Add  water, kokum, turmeric to dal. When it starts boiling, add dough
    strips & allow them to cook.

 8. Stir it occasionally so that dough does not stick to the bottom of pan.
     Cook it for 10-15 mins.
   

9. Add jaggery/sugar, salt & let it boil for 1-2 mins.

10. Turn it into serving dish, garnished with chopped coriander leaves &
      serve hot.

Tips:


1. You can add lemon juice to give it a tangy taste.

2. It can served with jeera rice.

3. Adding a bit of pure ghee while enjoying the dal dhokli
    will improve the taste.

Coriander chutney, also known as green/dhaniya chutney is a yummy, mouth-watering, spicy chutney. It is very aromatic, fresh and simply irresistible


This chutney is gifted with good taste and good looks! prepared with green coriander leaves, green chili, lemon juice. It goes well with samosa, pakoda, idli, vadas, chaat, a great sandwich spread & can be serve with main course dishes like biryani.


It is so simple & quick to prepare. Add all the ingredients together in a blender and tada - a delicious dip is ready !!

Ingredients:


1 bunch of coriander leaves (cilantro)
7-8 green chilies chopped
1 medium sized tomato
2 tsp lemon juice
1/2 inch ginger
1 tsp cumin seeds
1 1/2 tsp salt

Method:


1. Wash coriander leaves, green chili, tomato & ginger well.

2. Blend green chilies, tomato, cumin seeds, salt & ginger into a paste.

3. Add coriander leaves, a little at a time & blend.

4. If needed, add some water. The water will help in blending.

5. Blend well & add lemon juice.

6. Turn chutney into a bowl, mix well.

7. Lovely, spicy green chutney is ready.

Tips:


1. If you add lemon juice in coriander chutney it keeps the color of
    chutney good for long time.

2. You can use mint leaves also which give a different taste to
    chutney.

any where.It is necessarily served on any occasion to
friends and relatives.


The spices like cinnamon, cardamom, clove, dry ginger,

peppercorn etc add to the flavor of the tea and gives it 
special taste. Each ingredient adds a subtle flavor to 
the drink.



A cup of masala tea gives a wonderful sense of warmth

and has a soothing effect.The mere aroma of masala 

tea makes you to want one; it is hard to resist.

Ingredients:


100 gms dry ginger
50 gms black peppercorns
15 gms cloves
25 gms cinnamon
8-10 green cardamom



Method:



1. First grind dry ginger.


2. Add other ingredients & grind them to a fine powder.

3. Let it cool completely then sieve.

4. Store in an airtight container.

5. Use this chai masala whenever you make tea.


Tips:


1. Dry ginger is very hard, so you can use a coffee grinder to grind it.

2. You can use dry ginger powder in place of dry ginger.

3. For more variations you can also use nutmeg & lemon grass.

Cucumber With Chana Dal is a healthy vegetable with lot of fiber content.
Mostly prepare in north western and central part of India.It is very tasty and 
easily digestible. Easy to cook, the recipe is liked by one and all. Also suits
the diabetic patients.

Ingredients:


3/4 cup bengal gram dal (chana dal)
1 cup peeled & cubed cucumber
1/2 tsp cumin seeds 
1-/ tsp mustard seeds
1-2 green chili chopped
1/4 pinch of turmeric powder 
1 tsp red chili powder
1 tbsp coriander
1/2 tbsp oil
Salt to taste


Method:


1. Wash chana dal drain and keep aside.

2. Heat oil in a pan, add mustard seeds, cumin seeds and allow
    
them to crackle.

3. Add green chili, turmeric powder, red chili powder and water.

4. Now add dal and cook on a medium flame till  dal is tender.

5. Add cucumber pieces and simmer for 5 to 7 mins till cucumber is 
   done.

6. Turn sabzi into a serving bowl.

7. Garnish with coriander and serve hot.

1. Chana dal can be soaked for half an hour for better result.

2. Garam masala can be added to give a different taste.

fiber and are easily digestible.

Its colorful looks attracts every one particularly children. It doesn't need 

special cooking skills to prepare. One can do a lot of variation in this also
according to  her/his choice.

Ingredients:



10 slices bread
8 tsp butter
4 tsp green chutney
4 tsp mix fruit jam 
4 tsp tomato ketchup
1 medium sized cucumber, peeled & cut into thin slices
1 small sized onion cut into thin slices
2 medium sized potatoes boiled & cut into slices
2 medium sized tomatoes cut into thin slices
2 tsp chat masala


Method:


1. Rim off the edges of each slice of bread, apply butter and chutney.

2. Place a slice of bread, with the buttered and chutney side facing 
    upwards, on a flat surface.

3. Arrange a few cucumber, tomato, potato, onion slices & sprinkle 
    chat masala evenly over it.

4. Place another slice of bread, with the buttered & jam side facing 
    downwards & press it lightly.

5. Cut into 2 equal pieces or in your desired shape,garnish with green
     chutney and tomato ketchup, place them on a plate.

6. Serve immediately with tomato ketchup & green chutney.

    to your kids choice.

Besan laddu is a sweet prepared and liked all over India in all occasion more particularly on Diwali, Ganapati festival, Raksha bandhan, Holi...etc.

It is very delicious, satisfying and  a sweet favourit of children, young and old alike. Made of besan & ghee as prime ingredients. it can be preserved for days without spoiling the taste.

This recipe gets its unique and mouth watering flavor, taste and aroma from ghee, roasted gram flour, cardamom and dry fruits. It is very easy and simple to prepare.




Ingredients:



250 gms gram flour (besan)

250 gms powdered sugar

150 gms ghee 
8-10 almonds chopped
8-10 cashew nuts chopped
8-10 pistachios chopped
1 tsp green cardamom powder


Method:


1. Heat ghee in a pan/kadai, add gram flour, roast on low heat. Keep constantly
    stirring to  avoid lumps. 

2. When a nice aroma is given out, besan starts releasing ghee & turns light brown
     in color remove it from heat. This may take 10-12 mins.

3. Transfer it to a bowl & let it cool.    

4. Now add powered sugar, nuts, cardamom powder & mix thoroughly.

5. Shape into even sized laddus.

6. Garnish with chopped pistachio, cashew nut & almond.

7. Cool completely & store in  airtight container.

Tips:


1. Make sure you roast besan till  a nice aroma is given out, besan starts releasing
    ghee & turns light brown else it will give a raw taste to the laddus.

2. You can also garnish laddus with silver vark .

3. if roasted besan  becomes dry, making it difficult to make balls, add 1-2 tbsp of
    hot ghee to mixture.

4. If mixture becomes too soft, you can refrigerate mixture for 8-10 mins.
