Til Ki Burfi
(Sesame Seed Burfi)


Til Ki Burfi a delicious and healthy combination of crispy sesame seeds, khoya and sugar. It is mostly made during winter and Makar Sankranti. Distributing sweets made of Til (sesame seeds) on Makar Sankranti is a ritual.  

Til Ki Burfi is easy to prepare. It is mainly consume in winter because (sesame seeds) are warm in nature. it is a very tasty and satisfying dessert.


Til Ki Burfi


Ingredients:


500 gms til (sesame seeds)
250 gms khoya
500 gms sugar
2 cup water
2 tbsp desiccated coconut

Method:


1. Roast till in a pan till become light brown in color and allow  
    it to cool.

2. Transfer til (sesame seeds) to a mixer jar and make a coarse powder.

3. Heat a pan, add khoya and sauté on low heat till light pink or till it emits
    a nice aroma.

4. Transfer khoya in a big plate, add til (sesame seeds) & mix well.

5. In another pan, add sugar and water to make sugar syrup & cook till 1
    string consistency. 

6. Now add khoya, til (sesame seeds) mixture to sugar syrup and mix well.

7. Transfer burfi mixture in a greased try, level the surface.

8. Garnish with desiccated coconut and allow it to cool.

9. Cut in to desired shape, delicious til burfi is ready for this 
    Makar Sankranti.

Tips:


1. You can garnish burfi with your choice of nuts.

2. Til ki burfi can be without khoya also.


3. In place of sugar you can use jaggery.

  4. This is perfect winter/sankrant recipe... Because I don't like "talsankri" I can try this till recipe for coming sankrant...
