Lauki Ki Burfi
( Bottle Gourd Fudge/ Doodhi Ki Burfi )
Lauki ki Burfi is a dessert prepared during festivals/fast like Navratri/shravan. Lauki ki burfi is very delicious, healthy, nutritious as Lauki (bottle gourd) is a vegetable rich in iron, zinc, magnesium.
Lauki ki burfi is very tasty & easy to make. The main ingredients are lauki, milk, khoya, sugar, dry fruits & cardamom.
Ingredients:
2 cup lauki (bottle gourd) grated
1/2 liter milk
1 cup khoya
1/4 tsp cardamom powder
2-3 almond chopped
2-3 cashew nut chopped
Sugar to taste
Method:
1. Boil milk in a pan, add grated bottle gourd.
2. Cook it till milk reduces to half, add khoya, sugar & mix well.
3. When mixture becomes thick & starts living sides, add cardamom
powder & mix well.

4. Transfer it into greased try, spread evenly, garnish with almond & cashew

5. Let it cool, cut into the desired shape.
6. Delicious lauki ki burfi is ready to serve.
Tips:
1. You can add green food colour in burfi mixture.
2. Add nuts according to your choice.
3. Don't over cook burfi mixture otherwise burfi will become hard.
