Sabudana Vada
Sabudana Vada is popular street food in Mumbai. Sabudana Vadas are crunchy vadas which simply melt in the mouth and are best when eaten fresh. Any one can enjoy sabudana vada with a hot cup of tea during breakfast or tea time.
Ingredients:
2 cup sago/sabudana
2-3 potatoes boiled
2-3 green chili chopped
1/2 tsp cumin seeds
1/2 cup peanuts
1 tbsp coriander leaves
Oil to deep fry
Salt to taste
Method:
1. Clean, wash & soak sabudana in water for 5-6 hours or till they
become soft.

2. Peel and mash potatoes.
3. Roast, peel and grind peanuts in coarse powder.
4. Drain of all the water from soaked sabudana. Add mushed potatoes,
peanuts, salt, green chilies, cumin seeds, coriander leaves and mix well.

5. Now take some portion of sago mixture and shape them into flat round
vadas.
6. Deep fry the sabudana vadas till golden brown from both sides.
7. Remove vadas from oil and place on absorbent paper.
8. Serve hot and crispy sabudana with green chutney.
Tips:
1. For vadas sago should be soaked well.
2. All the water needs to be drained from sago otherwise vada will
become soggy and it won't get a good shape.
3. You can add some kuttu atta or amaranth flour in vada mixture.
4. While deep frying vadas oil should not be too hot.
5. You can shallow fried or bake the vadas in microwave.
