Makki Ki Roti Sarson Ka Saag

Makki ki roti Sarson ka saag is a very popular North Indian Dish and an all time
favorite winter 
food. This North Indian delicacy is a perfect meal for people who
love healthy traditional food. This 
irresistible Punjabi dish is simple and easy to
prepare, taste best when prepared fresh.

Ingredients:


For saag:


1 bunch sarson ka saag(mustard leaves)
1 bunch spinach
2 onion chopped
2 tomato chopped
2-3 green chilies chopped
1 tsp ginger garlic paste
1 tsp red chili powder
1/2 tsp garam masala powder
1/2 tsp mustad sedds
1/2 tsp cumin seeds
2 tbsp maize flour
1 tbsp butter
1 tbsp oil
Salt to taste

For roti:


2 cup maize flour(makki ka atta)
1/2 tsp salt
Water and butter as required

Method:


For saag:


1. Clean, wash and cut both sarson, spinach leves in running water.

2. Pressure cook spinach and sarson ka saag upto 4-5 whistle.

3. Immediately open the pressure cooker,strain the greens through a sieve,
    wash again in cold water which helps in retaining the color of greens.

4. Now pour the greens along with maize flour in a grinder and grind it into
    a coarse puree.

5. Heat oil in a pan add mustard seeds, cumin seeds when they crackle add
    ginger garlic paste saute for 2-3 sec.

6. Next add onion and fry till golden brown.

7. Add green chilies,tomatoes and saute till oil separates.then add red chili
    powder, garam masala powder and saute for some time.

8. Add sarson ka saag and spinach puree with maize flour, salt and cook for
   10-15 mins, stir occasionally.

9. Sarson ka saag is ready to serve.

For roti:


1. Add maize flour, salt in a bowl and mix well.

2. Add warn water knead it well until smooth.

3. Divide dough into equal portions and shape into balls. 

4. Place it on a plastic sheet flatten it with your palm.

5. Now place another plastic sheet on top of the flattened dough, pat it between
    palms to make a roti of medium thickness.

6. Heat a tawa, remove the top plastic sheet of roti and slowly place it on tawa.

7. Cook it with some butter on both sides till golden brown. 

8. Serve hot with a dollop of butter and sarson ka saag.

Tips:


1. Some other greens like bathua, radish leaves,fenugreek can also be added
     to saag.

2. In place of oil you can use ghee or unsalted butter.

3. Some wheat flour can be added to dough while making makki ki roti.

4. While grinding do not grind greens to a smooth paste.
